If you’ve been following me for a little while you’ll know I love soups – I even share my favourite winter ones in this post. I find soups filling and nourishing, especially in the winter time. However, in the summer and especially in the current mini heat wave that we are having here in the UK, a hot soup could end up being torture unless you are looking a sweat to get rid of toxins or God knows what. Looking for fresh, lighter dishes but still nourishing and tasty I want to share with you today 2 excellent cold soups. You could enjoy them as a main course, a starter or even as a little nibble during an aperitif.
